Corsica and its cheeses

Most Corsican cheeses are made from goat's milk and sheep's milk, which results in a bewitching and pungent flavor of the products. The latter deserve to be appreciated in spite of their high quality both on the texture and taste side and in their intensity. Delicates, they can be eaten either without any kind of side dish or browned on vegetables in the Corsican way (chard, aubergines, starches or others).
